Twice Roasted Sweet Potatoes
Serves 6
4 Medium Sweet Potatoes, diced
3 T. Coconut Oil
Roast in a 350 degree oven for til fork tender...about 20-30 minutes...shaking periodically to coat evenly with the oil and to prevent sticking.
In a large skillet:
Melt 3-4 T. butter
Oven roasted sweet potatoes
Pan roast until slightly brown and crisp.
